Summer brings fresh berries to Seward Co-op’s bakery and more local produce to our grab-and-go department. It also gives us a reason to celebrate!

Just in time for Twin Cities Pride, we’re breaking out rainbow cupcakes.

Round out the spread with other new Seward-made summer items—like salsas (verde, diablo and mild), summer vegetable pasta primavera, and strawberry cheesecake. Head to the Deli to see what’s fresh this season!

Seward-made Bierbrat with Fair State Brews


Seward Co-op’s sausage makers are partnering with Fair State Brewing Cooperative on a seasonal bierbrat.

Brat recipes are rotating with the seasons, as are the beers we bring in.

Starting in April, the Seward-made Bierbrat features pilsner from the Northeast Minneapolis co-op, as well as pork from Peterson Craftsman Meats and sauerkraut from Fizzeology—all Community Foods producers.

The recipe is inspired by a pork and cabbage sausage from Germany’s Steigerwald region of Bavaria. Our sausage makers use sauerkraut instead of cabbage and picked Fair State’s German pilsner for its dry and crisp flavor.

Enjoy Seward-made bierbrat poached in beer and then grilled. Pairs well with pan-friend potatoes, a green herb salad (Grüne Soße) and asparagus. Find the Seward-made Bierbrat in Meat & Seafood at Seward Co-op’s Franklin and Friendship stores.

Seward Co-op Peach Pie Slice Recall

Seward Co-op has issued a voluntary recall on Seward Co-op peach pie slices sold April 5-9 due to the potential presence of foreign material.

When you join Seward Co-op, you join a community of more than 20,000 other Minneapolis households that own three businesses. One of the benefits of co-owning the co-op is the opportunity to invest more than your initial share requirement by purchasing Class C stock.

What Is Class C Stock?
Class C stock is nonvoting investment stock with a share price of $500. Because of securities laws, only Seward Co-op owners who live in Minnesota can purchase it. Class C stock is sold at par value, meaning the dollar amount will stay the same as long as you own the stock. The static value of the stock eliminates the speculation that occurs with publicly traded stock. Seward Co-op’s Board of Directors must approve all purchases, transfers and sales of C stock. The board also decides the amount of a C stock dividend and when it will be paid.

How Does Class C Stock Help the Co-op?
Class C stock is considered equity (as opposed to debt), making Seward Co-op’s balance sheet stronger. The cash invested in the co-op via C Stock has several uses. Class C stock:

• provides resources to reinvest in the co-op’s buildings and equipment
• reduces the co-op’s dependence on bank financing
• helps make the co-op more sustainable

Class C stock is an investment option with local impact. Investing in our co-op may be the most socially responsible investment you can make. You can walk in the door and see your money at work.

Seward Co-op Chocolate Cupcakes Recall

Seward Co-op is recalling five units of mislabeled 2-pack Seward-made chocolate cupcakes due to undeclared allergens.

The product was available at both the Franklin and Friendship stores. All mislabeled product was sold and Seward Co-op confirmed there is no more on hand. The label said the allergens were milk, egg and soy, but the actual allergens were milk, coconut and wheat.

Recipe: Roasted Veg with Seward-made Dressing

Bring home our highly requested, housemade dressing for salads and fresh-cut produce. Use as a marinade or to season vegetables before roasting in the oven. Seward-made salad dressing is cooperatively handcrafted in small batches with ingredients that meet our product commitment. We prioritize small-scale, local vendors when sourcing ingredients.

Recipe: Roasted Veg & Tahini
Seward-made salad dressing is very versatile; pour it over hot veggies to serve hot or cold, over noodles, over rice and veggies. It’s a great marinade/sauce for chicken, fish or pork, too. While it’s still chilly outside, try it with roasted veggies and a heartier ingredient of your choice, such as Equal Exchange avocados, Seward-made sausage or nuts. This recipe is inspired by this National Co-op Grocers recipe.

Ingredients
Seward-made Garlic Tahini
•Olive oil (or oil of your choice)
•Salt and pepper to taste
Various veggies, such as:
•Brussels sprouts
•Delicata squash
•Cauliflower
•Sweet potatoes
•Kale

Preparation
Preheat the oven to 400 degrees F. Cut your veggies into bite-sized pieces. Drizzle with oil and salt and pepper to taste. Toss to coat, then spread veggies evenly on the pan. Roast until veggies are tender when pierced with a paring knife (time depends on how large you cut the pieces). While they roast, prepare your tofu, avocado, Seward-made sausage or other heartier topping. Pull out veggies and let cool.

To serve, plate the veggies, drizzle with dressing and top with your favorite heartier ingredient or protein.

Peterson Craftsman Meats pork and beef star in our white polish sausage with salt, marjoram, garlic, peppercorn, cayenne, and hog casing.

The sausage is a mainstay of Polish Easter and can be served with beet horseradish (wika), pan-fried potatoes, or—most commonly—with the sour ryemeal soup known as urek.

Sausage

Jerk Chicken Sausage—Get ready for some real spice. Our sausage makers bring in ingredients from local Community Foods producers Kadejan and The Beez Kneez for this brand-new recipe. Familiar with the Seward-made Hot Link? This Jerk Chicken Sausage is even hotter, thanks to habanero and cayenne peppers.

Persian Lamb Meatballs—Another new and totally delicious product, this Seward-made meatball is defined by the spice blend in it. Our sausage makers use spices found in Iranian cuisine, such as coriander, cinnamon and cardamom. Rose petals and star anise bring a sweet, fragrant and slightly spicy hint. Enjoy with tahdig (Iranian crispy rice) or baba ganoush—or at the center of a Persian stew.

Lamb Umbrian Sausage—This sausage brings together two Italian sausages: Lucanica from the southern region of Basilicata and Luganego from the northern region of Lombardy. We use lamb and pork from Peterson Craftsman Meats that are soaked in red and white wine infused with garlic and bay leaf. The spices are earthy and sharp, complementing the pecorino romano and pine nuts.

Shepherd’s Pie—Celebrate St. Patrick’s Day with this Irish favorite packed with lamb from Peterson Craftsman Meats, a local Community Foods producer in Osceola, Wisconsin. Our pie is hearty and topped with mashed potatoes. Simply bake and enjoy!

What is Pi Day?
Pi (Greek letter “π”) is the symbol used in mathematics to represent a constant, the ratio of the circumference of a circle to its diameter (about 3.14 …). Pi Day is an annual opportunity for math enthusiasts to recite the infinite digits of Pi, talk to their friends about math, and to eat pie.
