Microgreens: Cascarones – A Smashing Mexican Easter Tradition!

Learn about the Mexican tradition of making and enjoying cascarones- decorated, confetti-filled eggs used for Easter celebrations. Seward Co-op staff member Natalia Mendez will share stories from their family about the history of the eggs, as well as instruct how to make, decorate, and enjoy them – with a crack over the heads of friends! This is a family-friendly, hands-on event.

Happy Lao New Year! Lizzie from Seward Co-op will show us how to make fresh spring rolls – a fun and easy dish to make, and a staple of Southeast Asian cuisine.
From Lizzie- “When I was growing up, my family would all work together to churn out a ton of spring rolls (sometimes up to 100 of them) and have them as a side dish along with all of our other Laotian dishes for the new year. It was a great way to spend quality time with my family so I really associate spring rolls happy memories. They are very healthy, and you can make them either vegan or with shrimp. These spring rolls are perfect along with sweet chili or peanut dipping sauce!”

Come read to snack! You’ll have the chance to make and sample shrimp or vegetable spring rolls and sweet chili or peanut dipping sauces.

Asian American and Pacific Islander Heritage Month Class Series – Vegetarian Bibimbap

We are excited to present a cooking and lectures class series highlighting the food, traditions, and cultures of the Twin Cities’ Asian American and Pacific Islander community. Community instructors Jess Toliver, Koshiki Smith, and Kimiko Molasky will generously share their expertise on the traditions and history of ingredients and recipes from the AAPI community in Minnesota and beyond.
May 23 – Vegetarian Bibimbap
Learn how to make the delicious, fun, Korean dish Bibimbap. This vegetarian version is a rice bowl with a variety of color and flavorful vegetables on top. Drizzled with a delicious Gochujang sauce and topped with an over easy egg. You can see why this dish is a favorite amongst all!

Board of Directors April Meeting

Meetings of Seward Co-op’s Board of Directors are open to any co-op owner. The next monthly board meeting is virtual and will be held Tuesday, April 26. The meeting will include a 10-minute Co-op Owners Comment Period. The board of directors planned this in response to community members’ requests to address the board. Individual time allotment is dependent on number of owners who wish to speak. Agenda is available here. To indicate your intention to attend and/or participate in the Co-op Owners Comment Period, please email board@seward.coop prior to April 26.
Seward Co-op’s Board of Directors is comprised of nine elected co-op owners who serve the co-op for three-year terms. The board typically meets 9-10 times a year on the last Tuesday of the month, at 6:15 p.m. The co-op’s board of directors appreciates hearing from you! They are available to answer questions and provide information about cooperative governance.

Join us as we collaborate with Dream of Wild Health, Division of Indian Work, and Minneapolis American Indian Center for a series on Indigenous foods and recipes. We’ll make a series of delicious meals, drinks, medicines, and desserts using local and traditional foods as we explore nutritional and cultural significance of their ingredients. The instructors will share their expertise on sourcing, sustainability, and environmental impacts we’re seeing in real time.
Learn how to puff wild rice for this tart and sweet dessert with Vanessa Casillas and Hope Flanagan. We’ll also learn about wild rice characteristics, maple syrup harvesting, and cranberries.
