Instructions

Grilled burgers

Ingredients

2 pounds of ground beef (can use ground turkey or vegan patties)

1 teaspoon salt

1 teaspoon ground black pepper

1 tablespoon onion powder

1 tablespoon garlic powder

Burger buns

Optional: tomatoes, lettuce, cheese, ketchup, mustard or mayo

Method

In a large bowl, add meat and seasoning, mix until well combine. For burgers into patties and place on a large baking sheet with parchment paper. If using vegan patties, season each side of the patties an set aside.

Once grill is hot, about 400 degrees, place patties on grill and cook for about 6 to 7 minutes, or until desire doneness.

Let burgers sit for a few minutes and then add to buns.


Potato Salad

Ingredients

4 large potatoes

1/4 cup sweet pickle relish

1 cup mayonnaise

4 eggs, boiled and chopped

1 tablespoon mustard

1/4 teaspoon paprika

Salt and pepper

Method

Rinse off potatoes and boil in a large pot of water with skin on. Cook until tender and let them cool to the touch. Once the potatoes are cool, peel off the skin, cut into cubes and place in a large bowl.

In the large bowl with potatoes, add mayonnaise, eggs, sweet relish and paprika. Mix until well combine and season with salt and pepper.

Place potato salad in the fridge and chill until cool or can fridge over night.


Veggie or Chicken Kebobs

Ingredients

1 pound of boneless chicken breast OR 2 cups cremini mushrooms

1 cup cherry tomatoes

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

2 small zucchini, cut into 1 inch slices

1 red onion, cut into 1 inch pieces

1 pack of skewers, soaked in water for 10-15 minutes

3 tablespoon kosher salt

3 tablespoon black pepper

3 teaspoon paprika

3 teaspoon garlic powder

3 teaspoon onion powder

¾ teaspoon red pepper flakes

Method

Prepare grill or heat a grilled skillet on the stove. If using a grilled skillet on a stove top, coat with olive oil.

In a large bowl, combine chicken, veggies and seasonings until coated. Place each individual piece on skewer and place on a cookie sheet or aluminum pan.

Place skewers on grill and cook about 5-7 minutes on each side, or until chicken is cooked thoroughly.

Remove from grill and serve
