Curried Cauliflower Soup // Nourish
½ head of cauliflower riced or 2 cups pre riced cauliflower
2 tablespoon avocado oil
1 teaspoon salt and pepper
½ medium onion, diced
2 large carrots, diced
2 cups dinosaur kale, shredded
2 tablespoons ginger, minced
3 garlic cloves minced
1 teaspoon ground turmeric
2 tablespoon curry powder
1 teaspoon garlic powder
½ teaspoon cumin
½ teaspoon red pepper flakes
4 cups stock
1 – 15 ounce can coconut milk
cilantro and squeezed lime juice, to garnish
Add oil to a large stock pot. Add in onion, ginger and carrot. Sauté for 2 minutes.
Add in cauliflower and minced garlic.
Add in all the seasonings, stock, and coconut milk. Let simmer for 15 minutes
Add chopped kale and cook until tender.
Season to taste.
Serve garnished with lime juice and fresh cilantro.
