Lasagna Soup // Nourish


1 tablespoon olive oil

1 pound mild Italian sausage

1 small yellow onion, diced

6 garlic cloves, minced

6 basil leaves, sliced

1 1/2 teaspoon kosher salt

1 teaspoon oregano

1 teaspoon red pepper flakes

2 teaspoon ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon tomato paste

1 15 oz can crushed tomatoes

4 cups chick broth

6 lasagna noodles, broken into pieces

Optional topping:

3 tablespoon ricotta



In a Dutch oven or large pot, heat olive oil over medium high heat. Once hot, add Italian sausage and cook until brown, about 6-7 minutes. Add in onions, cook until soft then add garlic and seasonings. Cook for about 30 seconds.

Next add in tomato paste can cook until caramelized. Then add in your crushed tomatoes, chicken broth, and basil and bring to a boil.

Once boiling, add in lasagna noodles and cook until soft, 7-8 minutes.

Ricotta topping:

In a small bowl, combine ricotta and as much parmesan you like. Top soup with ricotta and enjoy!
