Vegan Poke Bowl // Nourish
1 Container Extra Firm Tofu, pressed and cut into cubes
2 Cups Cooked Rice, Quinoa or Cauliflower Rice
1 Cup Shelled Edamame
½ Cup Shredded Carrots
4 Thinly Sliced Radishes
2 Avocados Halved
½ Cup Red cabbage Shredded
¼ Cup Chopped Green onions
½ Cup Thinly Sliced Cucumber
1/4 Cup Coconut Aminos
2 Tsp Rice Vinegar
2 Tsp Sesame Oil
1 Tsp Maple Syrup
1 Tsp Sambal
Spicy Mayo Sauce
1/2 cup mayonnaise, preferably Japanese
1 Tsp Lime Juice Squeeze
2 tablespoons Sriracha hot sauce, plus more to taste
Whisk together the tofu marinade.
Add cubed tofu and marinate for 15 minutes.
In a separate bowl, mix together mayo, sriracha and lime juice. Set aside.
When the tofu is done marinating, add to a large sauté pan over medium-high heat. Brown on all sides. Remove and set aside.
To assemble, divide grain, tofu and vegetables among 4 large bowls.
Garnish with sesame seeds and seaweed and top with a drizzle of sesame oil and spicy mayo sauce.
