Wild Rice Salad with Sausages and Apples
3 tablespoons olive oil, divided
1 garlic clove, minced
6 Seward Co-op Spring Chicken sausages
1 cup dry long grain rice, cooked (or any rice you have at home)
1 cup wild rice
4 cups of vegetable broth
1 small onion, diced
3 Whistling Well apples, chopped
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
salt and pepper, to taste
Preheat the oven to 375°F.
Cook the sausages in a roasting pan for 15 to 20 minutes or until cooked through. Remove from the oven.
Combine the wild rice and the brown rice with vegetable broth in a pot. Cook until rice is tender, 40-45 minutes.
Heat 1 tablespoon of oil in a large pan over medium heat.
Sauté the onion, garlic and chopped apples for about a minute.
Cut sausage one into coins and add to pan.
Whisk the remaining two tablespoons of oil with the apple cider vinegar, honey and mustard. Pour the mixture over the sausages and apples and stir to coat.
Cook until apples are tender.
Salt and pepper to taste.
Divide the rice between 4 plates and serve the sausage and apples on top of the rice.
