Turkey Sloppy Joes With Roasted Potatoes // Nourish


Ingredients

Olive oil for sautéing
1 lb ground turkey chub
1 medium yellow onion, peeled and diced
1 medium carrot, sliced thin into half moons
1 cup tomato sauce/puree
1 tbsp tomato paste
2 tbsp cider vinegar
1½ tbsp light brown sugar
1 tbsp honey
2 tsp Dijon mustard
1 tsp chile powder
1 15-ounce can kidney beans, drained and rinsed
4 hamburger buns
Salt and freshly ground pepper, to taste
1 lb Yukon gold potatoes, cut into wedges

Instructions

Preheat oven to 400 F. Place the potatoes on a baking sheet, drizzle with oil, salt and pepper, roast about 30 minutes.

Heat oil over in a large sauté pan over medium heat and add the carrot and onion. Let cook 4-5 minutes and add the turkey.

Turn heat up to medium-high and cook, stirring occasionally, until the meat is just about cooked through, around 10 minutes.

Add the tomato sauce and pour 1/4 cup into the can and swirl around to get all the leftover sauce and add into meat.

Turn the heat down to medium-low and then add the vinegar, tomato paste, brown sugar, honey, mustard, and chile powder to the pan and give everything a really good stir.

Add the beans, season with salt and pepper and let simmer until desired thickness.

To serve, pile the Sloppy Joe mix onto a bun and serve with potatoes.
