Turkey Meatballs // Nourish
1 pound ground turkey
4 cloves garlic, minced
1/2 cup Panko breadcrumbs
1/2 cup crumbled Feta cheese
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
Zest of one lemon
1 egg, beaten
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
Olive oil for sautéing
1 tablespoon Italian seasoning
½ tablespoon red chili flakes
½ cup yellow onion diced
Splash of Balsamic Vinegar
Jar of marinara sauce
2 tablespoons chopped basil
Preheat oven to 425F.
In a medium bowl, combine ground turkey, garlic, Panko, feta, spinach, egg, zest, salt and pepper.
Roll turkey mixture into 1-inch balls. Place on a foil-lined baking pan coated with cooking spray.
Roast in the oven 18 minutes or until golden.
While meatballs are baking, heat olive oil in pan over medium-high heat.
Add diced onion, red pepper flakes and Italian seasoning. Sauté for 3 minutes or until onions are translucent.
Add a splash of balsamic and cook until reduced. Add marinara and simmer.
Add meatballs to sauce and top with chopped basil.
