Sweet and Savory Kim Chi Noodle Bowls
1 lb bulk dried noodles, any shape
3 tbsp peanut butter
3 tbsp Kim Chi, finely chopped
1/2 cup water
1 large apple, chopped into bite size pieces
1 package frozen edamame, thawed
1 tbsp tamari or soy sauce
1/2 tbsp hot sauce (optional)
Crushed peanuts for garnish (optional)
Mix peanut butter with Kim Chi, including the brine and water.
Toss noodles, apple, edamame, and peanut sauce together.
If more spice is preferred, add hot sauce.
Garnish with crushed peanuts and serve warm or chilled.
