Southwest Chicken Bowl
1/2 Seward Co-op rotisserie chicken
1 lb. Seward Co-op rice & beans
1 15oz can corn
1 14.5oz can dice tomatoes with chilies
Juice from 1 lime
2 tsp garlic powder
1 tsp chili powder
1/2 tsp paprika
1/2 tsp cumin
1 tsp black pepper
1 tsp salt
In a small bowl, combine seasonings and set aside.
On a cutting board, remove chicken from bones and shred into pieces, set aside.
Heat oil in large skillet over medium-high heat. Once hot add chicken, rice, beans, corn, tomatoes and seasoning. Cook until well combine, then add lime juice.
When done, remove from heat and divide into bowls.
Nourish Hint: can add additional toppings such as avocado, sour cream or cilantro.
