Sautéed Greens // Nourish
1 bunch collard greens, stems removed and chopped
1 bunch mustard greens, stems removed and chopped
1 bunch turnip greens, stems removed and chopped
1 red pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
1 yellow onion, diced
3 garlic cloves, minced
2 boxes 32 fl oz vegetable broth
1 teaspoon paprika
1 teaspoon cajun seasoning
1/4 teaspoon red chili flakes
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoon olive oil
Remove stems from greens and soak them overnight in hot water and salt to clean them.
In a large pot, heat olive oil. Once hot, add in onions, peppers and garlic. Cook until tender, then add in seasonings and cook for 30 seconds.
Add in vegetable broth and bring to a boil. Once it boils, add in greens and cook until soft and tender. About 30 minutes to an hour, or to desired doneness.
Serves 4 as a side
