Sautéed Collard Greens with Ground Turkey // Nourish
2 bunches collard greens or green kale (about 8 leaves), stems removed, sliced into 1″ strips
1 lb ground turkey
1 yellow onion, diced
4 garlic cloves, minced
1 red or green pepper, chopped
1 jalapeno, chopped
1/2 tsp salt
1/2 tsp black pepper
1 tsp paprika
1/4 cup chicken broth
Heat oil in a skillet over medium. Once hot, add onions and red pepper and sauté until soft, about 4 minutes.
Add in chopped jalapeno and garlic and sauté until fragrant, about 1 minute.
Add the spices and cook for about 30 seconds, stirring constantly.
Add ground turkey and cook, breaking up the meat into pieces, until mostly done, about 6 minutes.
Add collard greens and chicken broth and cook until wilted, about 10 minute. Add more seasoning for taste.
Serve over rice.
