Roasted French Breakfast Radishes with Chive Butter


1 pound french breakfast radishes, trimmed (cut in halve if large)

1 tablespoon olive oil

Kosher salt

2 tablespoon unsalted butter

1 tablespoon chives, thinly sliced

2 tablespoon whole grain mustard


Heat the oven to 400°F.

Toss the radishes with the oil and 1/8 tsp. salt. Spread on a large rimmed baking sheet lined with foil, and roast for 20 minutes, or until tender and light golden.

Meanwhile, in a large bowl, mash together the butter, chives, and mustard.

Transfer the radishes to the bowl, and toss to coat in the butter mixture. Season to taste with a good pinch of salt, and serve hot.
