Spicy Asian Noodles // Nourish under $10
2 Tbsp rice wine vinegar
¼ cup coconut aminos
1 Tbsp Hoisin
1 Tsp sesame oil
2 Tbsp Asian chili-garlic sauce or sambal
2 Tbsp water
1 Tsp Corn starch
1 tablespoon oil
16 ounces udon/rice noodles or noodle of choice
1 cup carrots, thinly sliced
1 large red bell pepper, thinly sliced
1/3 cup finely chopped green onion (white and green parts separated)
1/4 cup chopped fresh cilantro
1 tablespoon toasted sesame seeds
In a medium bowl, whisk together the first 7 ingredients; set aside.
Cook noodles according to package directions in a large pot; Drain and return to pot.
Next heat oil, add carrots, red bell pepper, and green onion( white part only). Saute until soft.
Combine sauteed vegetables, noodles and sauce mixture. Let simmer for 2 minutes or the sauce thickens.
Sprinkle with sesame seeds, cilantro and remaining green onion tops.
Serve hot or cold.
