Black Bean Burgers // Nourish


1 can black beans
½ green, red, or yellow bell pepper, diced
2 green stalks of green onions, minced
1 tbsp cumin
1 tsp salt
1 tsp cayenne
1 egg, beaten*
1 cup breadcrumbs
1 garlic clove, minced
1 tbsp Sriracha

Optional toppings:
Fresh alfalfa sprouts
Buns optional
Sriracha Mayo:
Mix together
2 tbsp lemon juice
3 tbsp Sriracha
1 cup mayo
Salt, to taste

*Vegan option: sub chia egg (1 tbsp chia seeds mixed with 2 ½ tbsp water)


Preheat oven to 400 degrees F and lightly oil a baking sheet.

In a medium bowl, food process or mash beans until thick and pasty.

Chop bell pepper, onion, and garlic. Then stir into mashed beans.

In a small bowl, stir chili powder, cumin, salt, sriracha and beaten egg.

Stir the egg mixture into the mashed beans.

Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

Place patties on baking sheet, and bake about 10 minutes on each side.

Garnish with optional toppings.

Serves 4
