Ham, Cheese, and Pepper Scramble // Nourish
1 tbsp water
1/2 tsp salt
1/2 tsp pepper
Olive oil or butter for sautéing
1 tsp hot sauce
4 oz thinly sliced deli ham, torn into small pieces
1 bell pepper or roasted red pepper, cut into 1/4 inch pieces
2 scallions, thinly sliced
1/2 cup extra-sharp cheddar cheese, grated
2 tbsp cream cheese
Whisk eggs, water, salt, pepper, and hot sauce together and set aside.
Heat oil or melt butter in a large nonstick skillet over medium heat.
Add ham and cook, tossing occasionally, until beginning to brown around the edges (2-3 minutes).
Add bell pepper and cook, tossing, for 1 minute; transfer to a plate.
Add the egg mixture to the skillet and cook, stirring every few seconds, to desired doneness (2-3 minutes).
Fold in the ham and pepper, scallions, and cheeses.
