Baba’s Falafel Sandwich with Creamy Tahini Sauce


 Baba’s chickpea falafel fritters

Baba’s pita bread, 4 pitas
1 red onion, sliced
1 cup fresh parsley, chopped
1 cup, cherry tomatoes, halves
Olive oil

Creamy Tahini Sauce

3/4 cup plain Greek yogurt

1/4 cup tahini

1-2 garlic cloves

1 lemon, juiced

1 tsp salt

black pepper


Pre-heat oven to 425 degrees F

Brush falafels with olive oil, put on baking sheet and bake for 25-30 minutes.

Put all ingredients for the creamy tahini sauce in a food processor, blend until smooth. Set aside.

Build the sandwiches by placing 2-3 falafel into each pita bread.

Add red onions, cherry tomatoes, and fresh parsley.

Drizzle the sandwiches with 2 tablespoons of creamy tahini sauce.
