Since 2015, Cosmic Wheel Creamery has lived on Turnip Rock Farm in Clear Lake, Wisc., where they milk 9-12 cows seasonally, spring to fall. Their cows are rotationally grazed on 60 carbon-sequestering acres of perennial pastures. They then turn all that seasonal grass milk into an array of delicious European-inspired, natural rind cheeses such as Tomme, cows-milk Manchego, and Alpine styles. They also include pasteurized fresh cheeses such as Garlic Dill Quark, Feta, Whole Milk Ricotta, and Camembert. Because they are seasonal, grass-based, and do not standardize the milk, their cheese varies with the season. It carries all the flavors of being 100% grass-fed and all the creaminess being raw-milk aged cheese.
