Try skewering chunks of watermelon, brushing them with olive oil, and throwing them on a hot grill for one or two minutes on each side. You can also add pieces of halloumi to the skewers for a bit of saltiness. Drizzle with balsamic to finish, and you have a delicious appetizer to any meal.
