In 2017, Revol Greens opened their first greenhouse just an hour south of Minneapolis in Owatonna, Minn. Starting with just 2.5 acres and a goal to bring locally grown greens to the Twin Cities area, Revol soon expanded to 10 acres in Owatonna and added additional greenhouses in California, Texas, and Georgia. With hydroponic growing practices and regional greenhouses, Revol is able to grow and harvest year-round, without pesticides or herbicides, pack their greens quickly, and ship within the same region where the greens originated. The Minnesota greenhouse serves Seward Co-op, and you can find a variety of salad mixes at both stores.

Growing indoors helps Revol to control the climate in which their greens grow as well as practice sustainability. Lettuces grown inside greenhouses use fewer natural resources than those grown on outdoor farms, particularly when it comes to water. Each 4 ounce package of Revol Greens was grown with just 1 pint of water; that’s 90% less water than field grown lettuce needs. Additionally, the Minnesota greenhouse captures rainwater and snowmelt in retention ponds, which is used as needed in facilities once it’s been UV sterilized.
