Vinegar Marinated Cucumber Salad
2 cucumbers, peeled and thinly sliced
1/2 cup cherry tomatoes, halves
1 small red onion, thinly sliced
4 tablespoon cup apple cider vinegar (or white vinegar)
2 tablespoon sugar
3 tablespoon water
1/2 teaspoon salt
Optional: (dill or cilantro)
Combine onions, cucumbers, and cheery tomatoes in a large bowl.
In a separate, medium-sized bowl, combine remaining ingredients. Stir until sugar dissolves.
Pour vinegar mixture over cucumbers and onions. Add the dill or cilantro. Stir until the cucumbers are evenly coated in the dressing.
Refrigerate for 20 minutes, drain liquid then serve.
