Vegan Split Pea Soup // Nourish
Ingredients
Olive oil for sautéing
1 medium yellow onion, diced
2 carrots, peeled and coined
2 stalks celery, chopped
3 small Yukon gold potatoes, scrubbed and chopped into cubes
2 cloves garlic, minced
1/4 teaspoon dried oregano
1/8 teaspoon smoked paprika
1 bay leaf
4 cups vegetarian broth, plus more if needed
1 1/4 cups (1/2 pound) dry green or yellow split peas
2 or 3 leaves green kale, stems removed, coarsely chopped
1/2 teaspoon apple cider vinegar or lemon juice
Salt and pepper to taste
1 tsp Liquid Smoke (optional)
Instructions
Heat olive oil in a large pot over medium heat.
Once oil is hot, add onion and simmer until onion is translucent.
Add carrots, celery, and potatoes, garlic and simmer 4 -5 minutes.
Add oregano, smoked paprika, bay leaf, broth, and split peas. Bring to a boil. Cover and reduce heat; simmer on low, stirring occasionally and adding more broth as needed, for 40-45 minutes, or until split peas are very tender.
Stir in kale and apple cider vinegar, and turn off the burner.
Garnish with croutons and serve hot.
Nourish hint: Add a teaspoon of liquid smoke for a smokier, meatier flavor.
