Sweet & Sour Cabbage Beet Soup with Bacon // Nourish
Ingredients
Olive oil for sautéing
4 bacon slices, cut into bite-size pieces
2 onions, finely chopped
1/2 head of green cabbage
1 beet, peeled and cut into matchstick pieces
1 apple, peeled, cored & finely chopped
2 tbsp apple cider vinegar
2 tbsp brown sugar
2 cloves
1/4 grated nutmeg
5 cups vegetable stock
Instructions
Heat oil in a large sauce pan. Add bacon, onions and cook gently for 5 minutes.
Add cabbage, beet, apple, vinegar, sugar, cloves and nutmeg. Pour in the stock and stir well.
Bring to a boil, reduce heat and cover pan.
Simmer the soup for about 20 minutes until the cabbage and beets are tender.
Season with salt and fresh ground pepper to taste.
Serve with warm crusty whole grain bread.
