Stewed Okra and Tomatoes with Bacon
4 slices of bacon, sliced
1 onion, chopped
3 cups of sliced okra
1 (14.5 ounce) can diced tomatoes
1 medium pepper, chopped
1 teaspoon of cajun seasoning
Kosher salt and pepper
1-2 cloves garlic, minced optional
In a medium size skillet over medium-high heat, add bacon and cook until a little brown.
Add onion and pepper and cook until soft, about 3 to 4 minutes.
Add okra and tomatoes, make sure to add reserve juice from tomatoes. Add cajun seasoning, salt and pepper and simmer for 15 minutes.
