Spinach, Zucchini, and Feta Eggbake // Nourish
Ingredients
1 sliced zucchini
1/2 cup green onions
1 tbsp oil
2 cups frozen spinach
2 tbsp fresh dill
8 eggs
1 tbsp Dijon mustard
1 tsp nutmeg
1 cup feta
Instructions
Preheat oven to 400F.
Heat oil in a large skillet over medium heat.
Add zucchini and green onions and sauté until softened.
Beat 8 eggs in large bowl.
Add cooked zucchini and green onions, and the remaining ingredients. Mix well.
Spray 9 x 9 shallow baking pan. Pour in egg mixture and bake 20-25 min.
