Shrimp Fried Rice // Nourish
Ingredients
Olive oil for sautéing
½ lbs shrimp, deveined
2 cups cooked rice (preferably pre-made a day ahead)
2 tbsp sesame oil
1 small yellow onion, chopped
1 cup frozen peas and/or carrots, thawed
2 eggs, lightly beaten
1 tbsp rice wine vinegar
2 tbsp soy sauce
1 tbsp Sriracha
Instructions
Preheat a large skillet or wok to medium heat.
Add oil. When hot, add shrimp and cook until translucent. Remove shrimp and set aside.
Add sesame oil to the pan.
Add onion, peas, and carrots and cook until tender.
Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
Add the rice and shrimp to the veggie and egg mixture. Pour the soy sauce, rice wine vinegar, and Sriracha on top.
Stir fry the rice and veggie mixture until golden brown and combined.
