Shorbat Adas (Lebanese Lentil Soup)
Olive oil for sautéing
1 onion, chopped
3 cloves garlic, finely chopped
1 carrot, finely chopped
2 celery stalks, finely chopped
2 cups (about 1 lb) bulk dried red lentils
8 cups of chicken or vegetable stock
1 tsp turmeric
1 1/2 tsp ground cumin
Handful of chopped parsley
Juice of half a lemon
Salt (if stock is sodium-free)
4 rounds pita, for serving
Heat oil in a pan and gently fry the chopped onions for 5 minutes.
Add the chopped garlic, carrots, celery, turmeric and cumin and continue cooking for two more minutes.
Stir in the lentils, add the stock and cook approximately 45 minutes, stirring several times throughout.
Add parsley and lemon juice and cook for 2-3 minutes.
Serve with pita.
