Savory Mung Bean Pancakes // Nourish
Ingredients
2 cups (about 1 lb) green mung beans, soaked overnight and rinsed well
1 cup water
½ cup scallions, chopped
2 carrots, shredded
1 tbsp garlic powder
1 small zucchini, shredded
¼ cup cilantro, chopped
Sea salt, to taste
Freshly ground black pepper to taste
Olive oil for sautéing
3 cups plain yogurt
Instructions
Blend the soaked and rinsed mung beans with water, adding a bit more water as necessary.
Add mixture into a large mixing bowl, adding the garlic powder, veggies and the cilantro; season to taste.
Heat some oil on a flat skillet over medium heat. Spoon out the mixture and cook for about 3 minutes on each side, or until browned.
Serve warm with a 1/3 cup yogurt on the side.
