Philly Cheesesteak Bowl
2 cups (1 lb) bulk dried short grain brown rice
Olive oil or butter for sautéing
½ pounds beef sirloin steak, cut across grain into about 1 1/2×1/2-inch strips
8 ounces fresh mushrooms, sliced
1 medium onion, chopped
1 green bell pepper, seeded and diced
Salt and pepper
4 ounces of provolone cheese, chopped small or shredded
Pour rice into a small saucepan with 4 cups of water. Bring to a boil, then reduce to simmer. Cover and let cook for 40 minutes.
Meanwhile, heat oil or butter in a pan over medium-high heat. Add sirloin and cook until browned.
Remove steak and set aside.
In the same pan, add a little more oil or butter and sauté mushrooms, onion, and bell pepper until the mushrooms cook down and the onion and bell pepper are soft.
Add steak back to pan and heat through if needed. Salt and pepper to taste.
Divide rice and steak/veggie mix into 4 bowls and top with provolone cheese.
