Papaya Salad
Ingredients
2 cups shredded papayas
6 cherry tomatoes, cut in halves
1-2 long green beans, cut into 1-inch pieces
1/4 cup unsalted roasted peanuts
2-3 garlic cloves
4-5 Thai or bird eye chilies
1⁄4 tablespoon fermented crab paste (You can purchase crab paste at your local Hmong market.)
1 tablespoon fish sauce
3 tablespoons palm sugar
2 tablespoons lime juice
Instructions
Pound the chilies, and garlic in a mortar, add the long bean and pound 4 – 5 times.
Add the tomatoes, lime juice, palm sugar, and fish sauce. Pound until mixed.
Add the 1 cup of shredded papayas, peanuts, and fermented crab paste into the mortar. Pound lightly until mixed. Then add the rest of the shredded papaya slices into the mortar and lightly mixed and pound 4-5 times.
Taste, and add more lime juice or fish sauce if needed.
Serve with a side of lettuce.

*You can purchase fermented crab paste, and palm sugar at your local Hmong grocery such as Good Deal Oriental Foods, Viengchan Oriental Market, and Golden Harvest Foods.
