Monte Christo Eggbake // Nourish
Ingredients
1 loaf cinnamon raisin bread
12 slices of Canadian bacon or ham slices
12 slices of Swiss cheese
1/4 cup dijon mustard
1 cup milk
10 large eggs
1 tsp. kosher salt
1/2 tsp. fresh ground pepper
Optional: Garnish with berries or maple syrup
Instructions
Prepare a 13×9 inch baking dish with cooking spray.
On a large surface, lay out the slices of bread.
Spread mustard evenly on bottom layer of bread.
Arrange the ham, then the sliced Swiss cheese on top.
On the other half of bread, spread the additional mustard. Put the pieces of bread together to make a sandwich; cut into triangles.
Place the triangles in the prepared pan. You will need to push them together to make them all fit.
Press finger holes on the tops of the bread to make sure the egg mixture will sink into the bread.
In a large bowl, whisk together the eggs, milk, salt and pepper.
Pour the egg mixture over the sandwiches. Cover and chill overnight.
If not leaving over night cover with plastic wrap and place something heavy in the bread to make sure it soaks in all the egg.
Preheat oven to 400 degrees.
Uncover the dish and bake for 30-35 minutes until golden or the eggs have set.
Serve with maple syrup and fresh fruit.
