Kim Chi Fried Rice with Bacon // Nourish
8 oz slab bacon, cut into 1/4-in lardons (sticks)
2 cups cooked rice (preferably day-old)
1 cup Kim Chi, roughly chopped and drained
Cook bacon in frying pan over low heat, until crispy and fat rendered.
Remove bacon from pan and drain, reserving 2 tbsp. of fat in the pan.
Fry rice in bacon fat.
Add bacon back in and stir.
