Italian Sausage Chili // Nourish
Ingredients
1 1/2 lb. bulk Seward Co-op Italian sausage (any variety)
2 tbsp olive oil
1 yellow onion, diced
2-3 cloves garlic, minced
1 15 oz can kidney beans
1 15 oz can cannellini beans
1 15 oz can diced tomatoes
1 15 oz can tomato sauce
1 7oz can chopped green chili peppers
1/2 tsp oregano
4 tbsp Chili seasoning
Instructions
Heat olive oil a large saucepan or deep skillet over medium heat, add in the italian sausage and onion, cook for 6-7 minutes.
Then add in minced garlic and seasonings and cook for 30 seconds or until fragrant.
Add diced tomatoes (undrained), tomato sauce, and beans (undrained).
Bring the liquid to a low boil. Then, reduce the heat (low to medium-low) to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
Remove the pot from the heat. Let the chili rest for 5-10 minutes before serving.
Serve with your favorite chili toppings, cornbread, etc.
