Hawaiian Loco Moco // Nourish
Ingredients
2 cups white sticky rice
2 cups water
1 lb ground beef/turkey burgers/vegan burgers
2 tsp salt
2 tsp black pepper
1 1/2 cup beef broth/turkey gravy or broth/vegan broth
1 tbsp soy sauce
2 tsp olive oil
2 cups fresh mushrooms
2 green onions, sliced
1-2 eggs
Instructions
Place the rice and 2 cups water in a rice cooker/pan and cook until it’s fully cooked.
Shape the protein into four patties. Season both sides with salt and pepper.
Heat olive oil in a cast iron skillet over medium-high heat. Cook for 5 min each side depending on how you like your burgers to be. Add salt and keep flipping them for about 3 to 4 minutes each side.
On reduced heat to medium-low, in another pan, put olive oil, mushrooms, salt, seasoning, pepper to taste and gravy/broth. Cook for 1-2 minutes, stirring continuously to combine. Cook until thickened, about 5 minutes.
In another pan, heat 2 teaspoons olive oil over medium-high high. Crack the eggs into the pan and fry for 3-4 minutes, until the whites are cooked through or depending how you like your eggs cooked.
Place a cooked patty on top of the rice. Spoon on gravy. Top with a cooked egg, and garnish with green onions.
