East African Cabbage // Nourish
Ingredients
1 head of medium sized cabbage, chopped
1 medium sized onion, diced
1/2 tbsp salt
Olive oil for sautéing
2 cloves garlic, minced
1 tsp ginger, minced
1 medium sized jalapeno or bell pepper, diced small
A small teaspoon of turmeric
Instructions
Heat oil in a saucepan over medium-high heat.
Add onion and sauté until fragrant, about 4 minutes.
Add salt and turmeric and cook until fragrant.
Add the cabbage, jalapeno or bell peppers, garlic and ginger and cook for about 5 minutes.
Add 1/2 cup of water, bring to boil, reduce heat, and simmer for 15 minutes.
Serve over injera, rice, whole wheat bread, or pita bread.
