East African Beef and Peppers // Nourish
Ingredients
Olive oil or butter for sautéing
3-4 lbs beef, cut diagonally across the grain into thin slices
1 large onion, diced
2 bell peppers, sliced
3 tsp. ginger, grated
3 cloves garlic, minced
2 large tomatoes, diced
Salt and pepper, to taste
4 pieces injera
Instructions
Heat oil in a frying pan over medium-high heat.
Add garlic and ginger; cook until fragrant.
Add onion, peppers, and beef and cook for about 10 minutes, until cooked through.
Stir in tomatoes and cook until heated.
Season with salt and pepper.
Serve with injera.
