Creamy White Bean and Spinach Quesadilla // Nourish
1 15 ounce can cannellini beans, rinsed and drained
3/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
1/8 teaspoon salt
2 cups fresh spinach
4 ounce pepper jack cheese, shredded
1/2 cup sour cream
4 8-inch tortillas
In a bowl, add rinse beans, cumin, garlic powder, chili powder, and salt. Stir all together until well combine.
Roughly chop spinach into small pieces. Add spinach, sour cream, cheese to beans and stir well to combine.
Add filling into each tortilla then fold them in half.
Heat a pan skillet over medium heat and cook tortillas 1 to 2 at a time until brown and crispy and the filling is melted and gooey, about 3-5 minutes.
Cut tortillas in half and serve.
