Cauliflower Soup // Nourish
Ingredients
2 tbsp olive oil
4 cloves of garlic, chopped
1/2 chopped onion
2- 3 tbsp curry powder or curry seasoning
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp sea salt
1 head cauliflower, cut into florets (thawed if frozen)
2 cups vegetable broth
1 cup milk (dairy or vegan)
1 tsp sea salt
Pinch of ground black pepper
Instructions
Preheat oven to 400F.
In a small bowl mix olive oil, curry powder, garlic powder, cumin, paprika, salt. Add cauliflower florets and toss until fully coated.
Spread the cauliflower on a baking dish or roasting pan. Place in oven and roast for 20 minutes.
Heat the oil in a large pot and add the garlic and onion.
Cook over medium-high heat until golden brown. Place in a blender when done. Add the cauliflower, broth and milk. Blend well. Pour back into the pan to warm if not hot enough to reheat.
Add salt, black pepper and nutritional yeast.
Serving suggestions– top with peas, toasted pine nuts or chickpeas, chopped chives, olive oil and/or ground black pepper.
