Black Bean and Potato Bake // Nourish
Ingredients
1 medium Russet potato, shredded
1 lb cooked black beans
1/2 onion, diced
1 clove of garlic, minced
1 tsp salt
1 tsp pepper
1 1/2 tsp ground cumin
1/2 cup shredded cheddar
2 bulk eggs
1/2 cup salsa
Instructions
Preheat oven to 350F.
Heat beans in saucepan with onions, garlic, cumin, salt and pepper until warm.
In a large bowl combine shredded potato, beans and 1/2 the amount of cheese.
Mix salsa with eggs in a small bowl. Pour egg mixture over contents in large bowl.
Transfer to greased, 9×9” baking pan and top with remaining cheese.
Bake for 30-45 minutes or until potatoes are tender.
Serves 4
