All cheeses are good, but they are not created equal for making a successful grilled cheese full of glorious strands of stretchy cheese when pulled apart. Crumbly cheeses like feta or blue cheese might be nice to sprinkle into the sandwich but for your base cheese, stick to varieties that melt smoothly like gouda, cheddar, Swiss, or Gruyere for those perfect cheese pulls. For extra flavor, add mustards, greens, fresh fruit like thinly sliced apple or pear, or fruit spreads to your grilled cheese.

Straight out of Wisconsin, Maple Leaf Co-op’s Smoked Gouda at $8.49 per pound has a gentle smokiness that comes from hickory chips and a subtle sweetness from added maple flavoring. They are also a Community Foods small-scale, cooperative farm, and supporting them means supporting their commitment to working with other local farmers.
Another Community Foods producer from Wisconsin, Pasture Pride’s Cheddar Cheese is on sale for $5.49 per pound and adds a bit of sharpness to your sandwich that pairs well with apples or spreads.
Though not a local option, 1655’s Gruyere is made in cooperation with Swiss farmers to create complex flavors in this sweet and nutty melting cheese. Gruyere is also on sale for National Grilled Cheese Sandwich Day, at $16.99 per pound.
