Vegetable Kabobs


2 cups cremini mushrooms

1 cup cherry tomatoes

1 red bell pepper

1 green bell pepper

1 yellow bell pepper

1 zucchini, cut into 1 inch slices

1 yellow zucchini, cut into 1 inch slices

Olive oil


3 tablespoon kosher salt

3 tablespoon black pepper

3 teaspoon paprika

3 teaspoon garlic powder

3 teaspoon onion powder

¾ teaspoon red pepper flakes


Prepare grill or heat a grilled skillet on the stove. If using a grilled skillet on a stove top, coat with olive oil.

In a large bowl, combine vegetables, olive oil and seasoning until coated. Place each individual piece on skewers and place on a cookie sheet or aluminum pan.

Place skewers on grill and cook until veggies are tender, about 10-15 minutes.

Remove from grill and serve.
