1 lb red potatoes, peeled

3 cups all purpose flour

1 egg

salt and pepper

1 jar of pasta sauce


Bring a large pot of salted water to a boil and add peeled potatoes. Cook until tender.

Once potatoes are cool, mash them in a large bowl, add flour, egg, and salt and pepper to taste. Combine well.

Knead lightly until dough is manageable and not to sticky, can add more flour if dough is too moist.

Break off a portion of dough and roll  to 1 cm in thickness on a flours board. Cut into 3 cm lengths and indent each piece with a fork. Continue this process until all the dough is used. Place on a flour board until ready to use.

Cook gnocchi in batches in a large pot of boiling salted water. Remove as they rise to the top.

Serve on plate with your favorite pasta sauce.
