DESCRIPTION:Most kombucha classes teach you what kombucha is and how to brew it. This workshop also explores why it works! Join microbiome researcher and founder of The Living Food Initiative\, Ky Guse\, PhD\, for an interactive introduction to the fascinating microbial ecosystem that transforms sweet tea into kombucha. Together\, we’ll explore the bacteria and yeast that make up the SCOBY\, how these microorganisms work together\, and how changes in temperature\, ingredients and time influence fermentation. \nWhether you are completely new to kombucha or have been brewing at home for years\, this workshop will help you understand fermentation through the lens of ecology and microbiome science.
