Latinx Heritage Month – Corn Tortillas and More

Join us for a celebration of Latinx history, culture, and tasty food that can be vegetarian or vegan. We’ll learn about the history of tortillas while making scratch-made quesadillas and roasted jalapeño salsa.

What to expect: The Friendship store is located at 317 E. 38th St. Minneapolis, MN. The classroom is in the northeast corner of the store, past the general seating area. It is mobility-device accessible.

Indigenous Foods Class Series

We are honored to partner again this year with local members of Indigenous-led organizations Dream of Wild Health, Division of Indian Work, Gatherings Café, and American Indian Family Center to share their knowledge through a series of cooking and lecture workshops.

These six classes will all focus on a different recipes using traditional ingredients. We will learn how to make delicious meals, drinks, medicines, and desserts as instructors share their expertise on sourcing, sustainability, and environmental impacts on local and native-grown foods.

Free virtual classes, 6:00 p.m. – 7:30 p.m.

Cooking with Koshiki: Miso Butter Corn & Foil-Yaki Salmon (Virtual class)

Miso Butter Corn & Foil Yaki are easy to prepare using easy-to-find local ingredients. Koshiki will prepare Miso Butter Corn, a great way of using miso, and Foil-Yaki, a simply cooking method that requires almost no cooking.

Cooking with Koshiki: Salmon Cake with Sweet Corn & Kabocha Rice (Virtual Class)

This salmon cake is made with Atlantic salmon, shucked sweet corn, panko, and seasoning. Panfried and served with homemade tartar sauce, this salmon cake is perfect for a hot summer or autumn dinner. We will pair the salmon with an easy kabocha- squash rice dish.
