Hill & Vale Beef Heart

Heart is underappreciated. It is delicious trimmed, cut into strips and marinated in balsamic vinegar with a splash of worcestershire, olive oil and thyme. The next day, grill quickly over high heat, and serve topped with a parsley/caper salad and red wine vinaigrette. - Jim B., Meat & Seafood

 

This recipe is originally from the Harmony Valley Farms CSA in Viroqua, Wisc.

Vegetables
1 cup burdock, scrubbed well, julienned
1/2 cup carrot, scrubbed julienned or coarsely grated
2 tablespoons green onion or shallot, minced
1 teaspoon sesame seeds, lightly toasted

Marinade
4 teaspoons soy sauce
2 teaspoons sesame oil
1 teaspoons rice vinegar
2 tablespoons honey

Sprinkle seeds over chopped veggies and toss with marinade. Best if chilled 4 hours before serving. Serves 4 - 6.
