Bent River Camembert
In my opinion, Bent River Camembert is the best domestic camembert around. Made right here in Mankato, Minn., the Alemar Cheese Co. makes it using org. Cedar Summit milk. Try pairing it with Duhaime orange & cranberry spread for the perfect appetizer. - Lori, Cheesemonger

This recipe is originally from the Harmony Valley Farms CSA in Viroqua, Wisconsin. The Vegetables:
1 cup burdock, scrubbed well, julienned
1/2 cup carrot, scrubbed julienned or coarsely grated
2 Tbs. green onion or shallot, minced
1 tsp. sesame seeds, lightly toasted
The Marinade:
4 tsp soy sauce
2 tsp sesame oil
1 tsp rice vinegar
2 Tbs. honey
Sprinkle seeds over chopped veggies and toss with marinade. Best if Chilled 4 hours before serving .
Serves 4 - 6.
