House-Made Haggis

Seward Co-op's haggis is great because it's handmade with local beef organ meat; which means there are more vitamins and minerals than other cuts of meat. Haggis has a really smooth texture and rich flavor. And since it's already cooked, there's really no preparation except re-heating it. It's great when taken out of its casing and fried up with eggs. You might think that lettuce is lettuce is lettuce, but the difference between a freshly harvested head of romaine from Heartbeet or Featherstone Farm, and the kind that comes out of a box from California is truly remarkable. It’s greener tasting, somehow, and barely needs vinegar and oil to make it delicious. This month, we’ll have local lettuce when it’s available, supplemented by California. By June, Featherstone will supply us with all varieties.  

You’ll probably notice that the appearance of what is called red leaf or green leaf is different from week to week. That’s because there are hundreds of varieties of lettuce seed, and our farms are able to grow a much wider selection than California growers, with the concerns of shipping durability, can. Under the green leaf lettuce tag, you may see “Salad Bowl” one week and “Black Seeded Simpson” the next, for example. As a general rule, early season leaf lettuce is soft and sweet. Later, you’ll find a more durable, flavorful leaf that goes well with creamy or highly flavored vinaigrette dressings.
