Bent River Camembert

-By Claudia Rhodes, Events Coordinator Another great way to celebrate the citrus season and the frozen tundra all at once!
Ingredients:
2 quarts milk
2 tbsp. butter
1 cup sugar
1/2 tsp. cinnamon,
1 vanilla bean split and seeds scraped
1 cup Arborio rice
1 1/2 cups water
1 orange, zested plus more for garnish
Pinch of salt
Method:
In a saucepan, place milk, butter, sugar, cinnamon, vanilla bean and seeds. In a separate heavy sauce pan or rice cooker, cook rice until done al dente. Once water has evaporated from the rice add milk mixture. Simmer stirring regularly until rice is tender. Add the orange zest and salt. Stir well and remove from heat.
The consistency should not be stiff, but like risotto. Spoon into bowls.
Garnish with orange zest and a dusting of cinnamon. Great warm with a scoop of vanilla ice cream!
